Recent research shows that the two most famous kitchens around the world are Chinese and Italian.
It is not surprising at all: they're delicious, light full and simple (read: fast) to make.
Other reason: they're healthy.
If we don't knew for sure, we would swear that the source of every kitchen is coming from the Chinese tradition of making food.
The Italian Pastas, like spaghetti and tagliatelle for instance, are coming from the Mie-family.
One kitchen-tool is significant for all the Chinese food: the wok can be used for to cook, to (stir-)fry, to steam, to stir and even to stew your beloved ingredients. Knives in different measures are only using in the kitchen, we never see a knive outside from it: afraid from hurting someone, perhaps? Yes, and we eat with chopsticks. It's easy to eat meat and vegetables when they are already cut in pieces.
China is a very big country and logically writing, it has many specialties from every part of it.
In the South-East tropical climate, we've many vegetables, seafood, fruit and little brunch-snacks, called Dim Sum, fried or steamed.
What is difficult to catch or even poisoned animals are a most precious food for the rich between us: shark fin, swallow nest, snakes, dogs... Where we can find this, we eat it, and not just the meat...
A colder climate needs stronger meat or methods of preparation like sheep, duck or fire stone -methods. It's why Peking-duck is very famous everywhere. And those who want to sweat all the time prefer certainly spicy dishes. And we don't say 'just spicy'...
In Chinese kitchen, even the food is divided in Ying and Yang, the harmonic equilibrum from cold and hot, female and male. Therefore, this dietic structure is known in all the Chinese kitchens. With the knowledge of the right (measure of) herbs, they can make a hot cup of soup to heal small illnesses.
